Healthy Keto/Banting/Low Carb Breakfast Egg and Spinach Muffin
Ingredients:
6 large eggs
1/4 cup heavy cream
1 cup fresh spinach, chopped
1/4 cup crumbled feta cheese
Salt and pepper to taste
Cooking spray or butter for greasing muffin tin
Instructions:
- Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or butter.
- In a mixing bowl, whisk together the eggs and heavy cream until well combined.
- Stir in the chopped spinach and crumbled feta cheese. Season with salt and pepper.
- Pour the egg mixture evenly into the prepared muffin tin.
- Bake in the preheated oven for 20-25 minutes, or until the egg muffins are set and lightly golden on top.
- Allow the egg muffins to cool for a few minutes before removing them from the muffin tin. Serve warm or at room temperature.
